LOADED OATS RECIPE | Baked Chai Oatmeal
Mother's Day is coming up and we absolutely love this cozy, nourishing baked oatmeal casserole, brimming with local ingredients. MwL lady Kristine, our resident kitchen-magician whipped up this recipe and it is like if coffee cake and a bowl of oatmeal made sweet love. So easy to make and is totally brunch-able! Our whole family LOVED it!
Baked Chai Loaded Oats
1 whole bag Made with Local Loaded Oats1 Cup Milk of choice
1 Cup Maple Syrup
3/4 Cup Butter (melted and slightly cooled)
1 Tbsp Vanilla
2 Eggs
1 Tbsp Baking Powder
1 Tbsp Cinnamon
1/2 Tbsp Ginger
1/2 tsp Nutmeg
1/2 tsp Coriander
1/8 tsp Freshly cracked pepper
1 tsp Salt
1 C Chopped nuts - optional (pecans are especially nice!)
Foxhill Vanilla yogurt to serve
Preheat oven to 400*F. Combine Loaded oats, spices, salt and baking powder in a large bowl, whisk to combine and smooth out any lumps.
In another bowl, whisk together milk, maple syrup, eggs, butter and vanilla.
Grease a 9 x 13 baking pan. Add wet ingredients to dry, stir to combine and pour into prepared pan.
Bake for 35-40 minutes. Allow to cool for 15 minutes before digging in and serve with a hearty scoop of Foxhill yogurt!
