BAR MIX RECIPE | Chocolate Banana Trail Mix Loaf

This yummy recipe pulls on our chocolate-lovin' heartstrings. Not just chocolate chips tossed into the mix, but melted and slathered over the whole dang thing. I love it being prepared in a loaf pan as it makes for thick, chewy slices. SO GOOD!

Chocolate Banana Trail Mix Loaf
small bag (or 3 cups) Granola Bar Mix
1/3rd cup honey
1/2 cup nut or seed butter  
1/2 ripe banana
1 cup dark chocolate chips (we love Camino brand)
All your favourite trail mix toppings
Coarse Salt

Preheat oven to 325'F. Prepare mix as instructed on back of packaging, mashing banana into the wet ingredients mix. Grease and line with parchment an 8x4 inch loaf pan. Press mixture into pan really well. Bake for 20 minutes covered with foil, remove and back for 15 minutes longer until edges are golden brown and centre feels set to the touch. Let cool for 10 minutes, remove from pan and allow to cool completely.
Melt chocolate chips in double boiler or in microwave. Pour and spread over top of loaf. Decorate as desired while chocolate is still wet. We used cocoa nibs, gojj berries, coconut flakes, pistachios and banana chips. Sprinkle with salt. Let set. Slice and Enjoy!
