LOADED OATS RECIPE | Chai Spiced Poached Pears with Dark Chocolate Muesli

Chai Spiced Poached Pears with Black Currant and Dark Chocolate Muesli
Poached Pears:
2 cups apple cider
1 cup water
2 cinnamon sticks
2 star anise pods
1 cardamom pod
3 slivers fresh ginger
Juice of half lemon
Zest of one lemon
4 Tbsps Honey or alternative liquid sweetener
2-4 bosc pears, peeled
Bring everything but pears to a boil, reduce to a simmer and add in pears. Cover with lid and leave on low for 2 hours. Remove pears from poaching liquid and allow to cool. Meanwhile turn poaching liquid on to medium heat and allow to simmer until reduced to a syrup, approx. 45 minutes. Allow syrup to cool slightly before serving.
4 cups of your favourite Made with Local Loaded Oats
1 cup flaked coconut
1/2 cup pumpkin seeds
1/2 cup hazelnuts or almonds
1/2 cup dried currants
1/4 cup ground flax seed
1/3 cup liquid coconut oil
1/3 cup maple syrup
2 egg whites (omit if wishing to leave vegan)
1 tsp cinnamon
1 tsp vanilla
1/2 tsp salt
1/2 mini dark chocolate chips or shaved dark chocolate
Combine all ingredients excluding dark chocolate. Spread onto parchment lined baking sheet. Bake at 275'F for 45 minutes, turn oven off and allow muesli to cool completely in oven. Break into clumps.
To serve:
Halve poached pears and with a spoon, scoop out seeds and about 1/4" extra around the perimeter/below. Place on plate and fill with muesli, scatter extra muesli amongst plate. Top with vanilla yogurt, shaved dark chocolate and poaching syrup. Serve immediately once plated. Enjoy!
