This cozy Cranberry Maple Baked Oatmeal from our girl Hannah Magee RD is what breakfast dreams are made of! Use a plant-based milk and flax egg to vegan-ize this nourishing breakfast casserole.
2 cups of Cranberry Maple Spice Loaded Oats
1 tsp baking powder
1/2 tsp sea salt
2 cups of milk of choice
2 eggs or flax eggs
1/4 cup maple syrup
1-2 slices bananas
1/2 cup chocolate chunks
Preheat oven to 385F and grease a 9” baking pan.
In a large bowl, combine oats, baking powder, and salt.
In a separate bowl whisk milk, eggs and maple syrup then add to dry Ingredients. Fold in chocolate chunks.
Pour mixture into baking pan and top with banana slices. Bake for 30 to 35 minutes until liquid is absorbed and oatmeal is golden brown.
Let cool for five minutes then serve! Makes 6 to 8 servings.
