Prepare mix using your nut/seed butter + honey as per instructions. Once the dry mix and wet ingredients are very well incorporated, roll dough into 1" balls and pop into the fridge for 20 minutes. While they're firming up, melt chocolate with coconut oil (we used the microwave for about 1.5 minutes, 30 seconds at a time). When chocolate and coconut oil are fully melted and smooth, dip cooled bites into the melted chocolate, using a spoon to help. This will be messy but delicious work.
Once all your bites are coated in chocolate, put them back into the fridge for at least an hour, or until the chocolate is firm and totally solid. Keep in fridge for up to one week.
